Ed's Cheeky Chicken

Whole Chicken
4 Lemons
Garlic (4 cloves)
TGA's Cheeky Ginger & Lemon Sauce |

Stuff the cavity of the chicken with chopped
Lemons & Garlic. Bake in an oven bag until
tender, remove chicken from the oven bag,
glaze with Cheeky Ginger & Lemon Sauce
and bake for 15 minutes

Butterfly Pork Fillets
Your Favourite TGA Wine Jelly
Teriyaki Sauce
Freshly Ground Black Pepper
Oil & Butter |
| Melt the Oil &
Butter in a skillet, add two teaspoons of Wine Jelly & a tablespoon
of Teriyaki Sauce, melt down. Then add the pork fillets & cook on a
medium heat approx 4 to 5 minutes per side. Serve on a Potato Mash
& drizzle the pan juices over the pork. Wine Jellies ideal for this
are Riesling Ginger & Lime, Semillon & Wild Quince, Chardonnay
& Chilli, Rosé & Rosemary & Traminer & Fresh

Fillet of Beef with
Cabernet & Cracked Pepper Jus Serves 4 |
Fillet of Beef
TGA's Cabernet & Cracked Pepper Wine Jelly
Freshly Ground Cracked Pepper
Oil |
| Cover the beef
generously with Cabernet & Cracked Pepper Wine Jelly and plenty of
freshly ground cracked pepper. Heat oil in a heavy base fry pan, when
hot add the beef, sear the outside of the meat until well done. Put the
beef into a moderate oven, allowing approx 10 mins per 500gm for rare
and 20mins for medium. Add to the fry pan a little more of the Cabernet
& Cracked Wine Jelly and Verjuice and reduce and serve over the
beef after slicing. |

1 kg King Prawns
TGA's Killer Chilli & Garlic Sauce
|
Peel King Prawns; better
still, get somebody
else to peel the King Prawns, pour Killer Chilli & Garlic Sauce
into a dipping bowl. Dip a King Prawn into the Killer Chilli &
Garlic Sauce and then consume immediately, repeat this until all the
King
Prawns are gone. |

Green Prawns & Baby Octopus Marinade |
1 kg Green Prawns
1 kg Cleaned Baby Octopus
TGA’s Killer Chilli & Garlic
Sauce or Cheeky Ginger &
Lemon Sauce
4 Cloves Garlic
1/2 cup Soy Sauce
1 cup Dry White Wine or Verjuice |

Finely
chop the 4 Cloves of Garlic, add 1/2
to a tablespoon of Cheeky Ginger & Lemon Sauce, 1/4 cup Soy Sauce
and 1/2 cup of Dry White Wine or Verjuice. Repeat but substitute the
Cheeky Ginger & Lemon Sauce with the Killer Chilli & Garlic
Sauce. Marinate 1/2 the Shelled Green Prawns and 1/2 the Baby Octopus
separately in
each of the marinades for 1-1.1/2hrs. Cook the two lots of marinated
prawns on a hot plate first, they will take only a few minutes. While
you’re eating the Prawns the marinated Baby Octopus can be
cooking on the hot plate, when the Prawns are finished the octopus will
be ready to eat.... bon appetit
